Persian Chicken (Yellow Chicken)
This recipe is really good and fairly easy to make.
One can find saffron and turmeric at Patel’s Indian Grocery store in Monroeville.

Ingredients
10 – chicken legs, or mixed with thighs (can also use breasts)
1 – large onion (rough chopped)
1 – tsp. turmeric (add heaping , or use 2)
1/2 – cup water ( substitute with chicken broth – I use 1&1/2 for more broth)
12 – threads saffron mixed with water (make tea)
1/3- cup lemon juice (I cut back to 1/4 – depends on your taste)
Directions
A. Place chopped onion in large skillet
B. Add chicken on top and season with salt and pepper.
C. Add turmeric and 1/2 C. water (broth)
D. Cover and cook for 30 minutes or until chicken is cooked through
(10 minutes into cooking give pot a stir to cover chicken with turmeric)
E. Remove chicken and keep warm
F. Add saffron and water mix to pot, along with lemon juice. Adjust salt and pepper.
G. With hand mixer or blender, blend all the juices until smooth, heat until sauce is reduced and thickens. (May want to thicken with corn starch and simmer for 10 minutes or so.)
H. Return chicken to broth mixture. Serve with rice.

Temple David will be collecting cans of soup and can openers to donate to Cross Roads Food Pantry. We are adding can openers to our drive this year because if you do not have a can opener, you can’t always open a can of soup received from a food pantry.
Ahasuerus’ feast lasted 150 days; our goal is to donate 150 cans of soup and lots of can openers!
There are always multiple ways to help!
- Bring cans of soup and can openers to Temple David during religious school, services, or office hours. Please call Beverly to schedule a drop off time during office hours at 412-372-1200.
- Write a check to “Cross Roads Food Pantry” and add “Temple David Food Drive” in the memo line. Send donation checks to Temple David by Friday, March 18, and they will be delivered with the soup and can openers to the Food Pantry.
